Very sad to report that 42 year old Jay Spargo, the wife of Falmouth born chef James Spargo, has peacefully slipped her anchor and sailed on the morning tide after an illness borne with much courage, writes In Port's David Barnicoat.

Jay, was a former chief catering officer for the Sail Training Association (STA) topsail schooners Malcolm Miller and Sir Winston Churchill. She met James in Sunderland in 1996 when asked to remain onboard to assist James with the catering during the vessel’s annual refit.

That was Jay`s start to a very successful career in catering and rapid promotion within the STA.

Jay enjoyed several years sailing on the Sir Winston Churchill as cook, winning the respect and admiration of her fellow crew members; always maintaining that wonderful breezy attitude and heart melting, stellar smile, even in the most trying of circumstances.

Coming back to Falmouth Jay worked at the Penmere Manor Hotel, the Princess Pavilion and the Royal Cornwall Yacht Club with James. Latterly James and Jay were asked to provide catering facilities at the Pendennis Shipyard for the workforce.

James said: “Her cheerfulness never left her, even in the face of adversity.”

Her funeral service is at Penmount Crematorium on July 12th at 10am.
