Another chef making a name for himself in Padstow in Cornwall is Gareth Eddy, head chef at Pescadou, the restaurant within the Old Custom House, a Walter Hicks hotel.

Gareth, who himself was born in Cornwall and whose family roots are firmly in Cornish soil, is one of the UK's most dynamic young chefs.

His style is driven by working with flavour combinations but at the same time, focusing on no nonsense presentation. He does not believe in following "food trends" but building his recipes around the very freshest and finest local seasonal produce.

He has worked all over the world, building on his knowledge of international cuisine to bring exciting new twists and mouth watering flavour combinations to his rapidly expanding portfolio of recipes.

Having also worked with highly respected chefs such as Keith Floyd and Rick Stein, Gareth has developed great team building abilities and understands the importance of maintaining good communication with his staff - many of whom also come from Cornwall.

Gareth's background began at the Seafood Restaurant, Padstow, but he has also worked in Australia as well as such famous places in this country as Burgh Island Hotel, Floyds Inn & Floyds Canteen and the Victoria Hotel, Dartmouth.

The Pescadou forms part of a 24 room hotel with views over the harbour. The team pride themselves in using local produce wherever possible and in particular fish.
