TWO Somerset chefs are joining forces to deliver a class at a new cookery school.

Andrew Dixon, from The Café Porlock Weir, and Olivier Certain, head chef at Clavelshay Barn Restaurant, will be teaching people how to make pasta dishes at Clavelshay Barn in North Petherton on May 10.

The duo will be making ravioli tortellini and open lasagne and showing how to make fresh sauce to go with it.

The restaurant’s co-owner, Sue Milverton said: “The first Clavelshay Barn Cookery School event in March, which was all about fish, was such a huge success with these two super talented, professional chefs that we’ve organised our next event and this time we’ll be focussing on pasta.

"This is your chance to learn the art of pasta making during this hands-on workshop.

"Andrew and Olivier will show you how to make the perfect pasta dough, how to flavour and fill pasta and how to create different pasta shapes."

Marseille-born Olivier moved to England in 1998 following his Michelin star training in La Bonne Etape, Chateau Arnoux and Hotel Les Roches in Le Lavandou, France.

In 2001, he joined Andrew Dixon at Andrew’s on the Weir, Porlock Weir and together they achieved three AA rosettes.

Olivier said: “Working with Andrew again is simply wonderful.

"We achieved a great deal together and had a great rapport.

"Now we’re re-united for this new venture we’re both delighted.”

Clavelshay Barn Restaurant is set within a restored and converted 18th century stone barn at the foot of the Quantock Hills.

It is also a family-run farm that produces its own milk, beef, pork, lamb and eggs, which all feature the dishes.

Sue added: “We use our own pork, rose veal, wild rabbit, pigeon, pheasant and our own farm-reared beef on the menu.

"We have a walled garden where we grow salad leaves, herbs, soft fruit and vegetables.

"If it is not possible to use our own produce, we only use local suppliers who can provide us with quality local produce which is fully traceable."

The Cookery School event at Clavelshay Barn Restaurant will take place on May 10 from 9.30am until 4pm and costs £95 per person including lunch and wine.
